Dosa batter

Ingredients

  • Idly rice – 4 cups
  • Whole skinless urad dal – 1 cup
  • Fenugreek – 1 tbsp

Procedure

  1. Soak all the ingredients separately for at least 5 hours .
  2. Grind urad dal until smooth and fluffy.
  3. Grind the fenugreek first until it’s smooth then add the idly rice and continue grinding until it’s fine but slightly grainy.
  4. Mix everything together with salt.
  5. Allow the mix to ferment at room temperature until the batter rises up and has a slight fermented smell.
  6. Store in refrigerator.
  7. Add water to get the consistency you want before making idly or dosa.

Coconut rice

Ingredients:

  • Mustard seeds
  • Split Urad dal
  • Split Channa dal
  • Green chilies
  • Ginger
  • Asafoetida power
  • Curry leaves
  • Salt
  • Rice
  • Coconut oil
  • Shredded coconut

Procedure:

  • Cook rice, but not mushy
  • Add coconut oil and cooking oil to pan
  • Add mustard seeds
  • Add channa dal and urad dal when mustard seeds are starting to splutter
  • Add green chilies, ginger, curry leaves
  • Add asafoetida powder last and add the shredded coconut
  • Mix for 2 to 3 minutes until the coconut is light crispy
  • Add to rice and mix
  • Add more salt, shredded coconut, or coconut oil to adjust taste
  • Garnish with corriander seeds

Lemon rice

Ingredients:

  • Lemon juice
  • Gingely oil
  • Mustard seeds
  • Split Urad dal
  • Split Channa dal
  • Green chilies
  • Ginger
  • Asafoetida power
  • Curry leaves
  • Salt
  • Rice
  • Turmeric powder

Procedure:

  • Cook rice
  • Add 1 tsp turmeric rice to the rice when it is hot
  • Add gingely oil and cooking oil to pan
  • Add mustard seeds
  • Add channa dal and urad dal when mustard seeds are starting to splutter
  • Add green chilies, ginger, curry leaves
  • Add asafoetida powder last and pour the mix into the rice on top of the turmeric
  • Add gingely oil to the rice, salt, and lemon juice
  • Mix the rice
  • Add more turmeric powder, salt, lemon juice and mix to reach required level of color, and taste.

 

Chicken Kebab (kebap, kabab, kebob, kabob, kibob, kebhav, or kephav)

Ingredients

  1. Ground chicken – 250 grams
  2. 1/2 egg
  3. salt
  4. green chili
  5. ginger
  6. garlic
  7. fenugreek leaves (kasoori methi)
  8. garam masala
  9. jeera powder
  10. Onions – finely diced
  11. Cilantro

Method

  1. Mix ingredients 1 to 9 together and refrigerate for 2 hrs
  2. Remove mix from refrigerator and mix in onions and cilantro
  3. Put the mix on skewers
  4. Preheat oven to 350F and bake for 30 minutes turning the skewers once after 15 minutes
  5. Garnish with diced onions, cilantro, chaat masala, and lime juice
